So I got this idea that a rice cooker probably works the same as a pressure cooker…so why not try making a stew in it? So I made a trip to Superstore to shop for some stew essentials!Pork Loin, Carrot, Onion, Fresh Rosemary and Oregano, Vegetable Stock, Butter, Baby Potatoes and Pancetta.

First I rubbed the pork down with salt and pepper and then browned it in butter with the fresh oregano and rosemary as well as the pancetta for more flavor.

I also cut and roasted the potatoes in salt and pepper with some chopped rosemary.

Then I poured in the vegetable stock and added the pork loin + pancetta, potatoes and onions into the rice cooker pot with another handful of fresh herbs.  I let this combination pressure cook down so that everything could get cooked through.

Presto!  Delicious and super flavroful broth and super tender pork!  To this I added carrots and cauliflower and let it slowly simmer in the pot to get it cooked without becoming crumbly.

The result?  Success!!  Saltiness from the pancetta, sweetness from the vegetables, aromatic herbs and meaty from the pork.  Super duper hearty and delicious!  I’m so proud of myself 😀
