I was trying to think of some creative ways to incorporate tofu into my meal today and thought…. “Hmmm, why not make something bite-sized!”.  I rummaged through the fridge and pulled out everything that I felt could be relevant to this idea of a deep-fried tofu mash.

I used this deliciously delicate ready-to-eat raw tofu from Pulmuone and made a mixture of crispy real bacon bits, cream cheese and some parsley for a punch of real herb flavor.  I then rolled the balls around in Italian herbed fine breadcrumbs.

They look pretty delish, right?  But….I actually didn’t like it as much as i thought i would.  I think next time I need to use firmer tofu and perhaps work on the breadcrumb exterior because it kept falling apart while being fried!  But it was a good idea 🙂
