I headed down to the main floor where a breakfast buffet awaited me. Wow!!! So much variety, so much space and so many good smells….where to even begin?! I’m not normally a breakfast person, but I couldn’t wait to dig in
There was everything from congee to dim sum, to waffles, not to mention a little pho-cart! Basically you go to the cart and indicate what you’d like them to put in your bowl. Finally my first real Vietnamese pho!!
I opted to go simple with just noodles, some meat, scallions, deep fried shallots and of course, chili slices. The most noticeable difference is the broth. It’s very clear and translucent. Also, the noodles are not gummy and seem less rubbery. And guess what? No cilantro??!!!? As for taste, I would say it was a decent bowl of Pho. Clean flavors. Oh, but the chilis? Don’t leave them in for too long, and don’t get too many. They are FIRE!! Just 5 minutes in the bowl and already there’s an intense heat!
