Jenny invited me over to her new place for lunch on my break, so I came armed with ingredients to make us a pasta lunch. Lunch for the day? Goat Cheese and Garlic Ravioli with Fresh Basil and Tuna in Pesto~!
I had to juggle the tasks of prepping, cooking, eating and make small talk all in the short span of 50 minutes – no small feat…! First: Boil water while chopping and cooking onion and sweet orange bell pepper. When water comes to a boil, salt and then drop them little goat cheese raviolis in 🙂
After the pasta is cooked, drain and throw into pan with the veg, pesto and tuna and give them all a quick toss! Make sure all ingredients are evenly coated and tuna is well flaked and distributed.
Then…Voila! Yum Yum Yum! Devour and enjoy each other’s company 🙂
Jenny even had time to slice up an apple for dessert! Now, THIS is what I call a quick fix 😉
